LT Burger's East End Pile Up

           Sunday brunch at LT Burger in Sag Harbor has become a ritual on my infrequent weekends in the Hamptons. We arrive at noon and get a table against the wall, the better to avoid the approach of wayward moppets. I love the excuse to over-indulge. We might share a milk shake and the fried dill pickles. Then I’ll have a lobster roll. Or a Mexican Burger with guacamole and bacon. My friend who lives in Sag recently ordered the East End Pileup, a discovery for me.

Ingredients

1 cup of home fries

3 ounces spicy Italian Sausage

1/2 cup blanched chopped broccoli rabe

1/4 cup pepper and onions

Parsley - chopped

2 slices swiss cheese

2 sunny side up eggs

Recipe

 

          In the brown bottomed dish with handles, place the home fries. On the flat-top, cook the sausage with the broccoli rabe, pepper and onion mixture until sausage is fully cooked, season and finish with parsley. Place the sausage mixture over the home fries, top with the swiss cheese and cook in salamander until cheese is melted. Top with two sunny side up eggs (unless otherwise specified by guest), season and finish with chives.
