Green is our new mantra. Scary how fast that happened. And about time. Let’s hope there won’t be a hideous backlash into unbridled pollution. Meanwhile, the Glazier Group has colored Bridgewaters-to-Go bright green, from biodegradable forks and spoons to dishes made of corn and potato they say are “completely compostable.” That means their new off-site catered breakfast, lunch and snacks for offices will feature only “handmade, farmhouse, freshly baked and toasted, chef-smoked, organic, natural, free range, fair trade and cage-free” offerings. After you’ve grazed on your farmhouse cheeseboard and forked your organic greens and cage-free egg salad with rosemary, just toss the leftover debris into their recyclable bag, call Bridgewaters-to-Go (212 528 5200) and they’ll pick up the trash and recycle it. Next to come: edible forks and soup bowls. Not a word yet about how soon we’ll find green steak at Strip House.
